Bulgarian Cucumber Soup
Serves 4 Bulgaria Europe
1 Big Cucumber, peeled and chopped
1 garlic clove, Finley chopped
450 –500ml Plain Yoghurt
1/4 tsp Salt
2 tbsp Freshly chopped Dill
Toasted almond flakes to top with if desired
1. Blend the cucumber and garlic to a puree.
2. Put into to a large bowl, add the dill, salt, water, and yoghurt and mix well.
3. Cover with cling film and refrigerate at least 2 hours before serving.
When ready to serve, ladle into bowls and sprinkle with toasted almonds
